- Tuna tartare, marinated egg yolk, tartare sauce, crisp salad
- Marinated amberjack with citrus fruit, crispy lemon fennel and toasted almonds
- Prawn and monkfish ceviche with lime, coriander, yellow cherry tomatoes, red onion, celery, ginger, and red and green chilli
- Gillardeau oysters with marinara citronette on the side
