This winter, a menu dedicated to brodetti
There are dishes that are not created to amaze. They are created to heat up, to accompany, to slow things down. This winter, at the Lavatoio, we have decided to give brodets a home of their own: a small dedicated menu, designed to tell the story of the sea when it's cold outside.
Why a bobbins lace map
Fish stew is one of those dishes that only seem simple to those looking from afar. In reality, it is balance, time, respect for the ingredients. It is a dish that loves neither haste nor shortcuts.
We like to think of it like this: an Italian comfort food, made with care, that doesn't weigh you down, but tidy away.That's why we didn't want to “add” it to the menu. We wanted taking care of it.
What you will find on our menu
We started with three small broths, different from one another, but united by the same underlying idea:
- depth, without heaviness
- distinctive sea, but never loud
- a cuisine that accompanies the evening, not invades it
It is not a definitive collection. It is a beginning, which will grow with the winter.
An invitation to try them
Whenever something new is born, we always like to do the same thing: invite you to try it, without complications. That is why we have thought of a small invitation, simple and clear.
How does the invitation work?
